Cold Feta Dip

1 cup crumbled feta
1 tablespoon grated lemon zest
1 tablespoons fresh lemon juice
1 garlic clove, minced
6 tablespoons extra-virgin olive oil
fresh thyme
 
Place the feta, lemon zest, 1 tablespoon lemon juice, garlic, and olive oil in a food processor until it's mostly smooth, a few chunks are ok.
Spoon into a serving bowl, drizzle with a little oil, and sprinkle with fresh thyme
Serve with pita chips or grilled naan
