preheat to 350 degrees
Mix extra moist yellow cake mix with:
3 eggs
1/2 cup oil
1 large can crushed pineapple (with juice)
Bake for 36 minutes
For topping:
some powdered sugar (1/2-3/4 c?)
about a cup or a little more of heavy whipping cream
vanilla bean paste
whip until stiff peaks
fold in mascarpone
