Party Salad

Spring mix and shredded iceberg mixed

1/2 cup Craisins

1/2 cup candied pecan pieces

1/3 cup feta

1 honeycrisp apple (julienned)

1/4 cup red onion (soak in ice water)

4 sliced (or more) crumbled bacon


Dressing (loose recipe - adjust to taste)

4 tablespoons olive oil

3 tablespoons honey

4 tablespoons apple cider vinegar

1 tablespoon sugar

3 teaspoons dijon mustard

2 tablespoons mayonnaise

salt and pepper

Zucchini Bread

Preheat oven to 350 degrees

2 cups grated packed zucchini (not wrung out or drained)
2 large eggs
1/3 cup olive oil
1/3 cup melted butter
1/2 cup packed dark brown sugar
1/2 cup sugar
1 tsp vanilla paste
1 tsp salt
1 1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp ginger
3/4 tsp baking soda
1/2 tsp baking powder
2 cups flour
turbinado sugar for topping

Coat 9x5 inch loaf pan with baking pam.
Add oil, eggs, sugars, vanilla and salt to zucchini. Mix to combine.
Sprinkle spices, soda and powder over batter and mix til combined.
Add flour and mix until just combined DO NOT OVERMIX.
Pour into loaf pan and liberally coat top with turbinado sugar.
Bake 60 minutes.
Let cool completely in pan - leave unwrapped overnight/24 hrs.
