- about 3 medium zucchini and one spiralized carrot as well
- 2 Tablespoons (30ml) olive oil, divided
- chicken (cut into strips) or cubed tofu
- 3 large cloves garlic, minced or crushed
- 1/2 red bell pepper, seeded and sliced thin
- 3 green onions, sliced
- 1 large egg
- about 2 cups bean sprouts

cup peanut butter
- ¼
cup lime juice

tablespoons soy sauce
- 2
tablespoons honey
- 2
teaspoons grated fresh ginger
- 1
pinch red pepper flakes

3 tablespoons water, to thin (depending on how well you drain the zucchini, you may or may not need this)
