Healthy Pad Thai

for the zucchini noodle pad thai:
  • about 3 medium zucchini and one spiralized carrot as well
  • 2 Tablespoons (30ml) olive oil, divided
  • chicken (cut into strips) or cubed tofu
  • 3 large cloves garlic, minced or crushed
  • 1/2 red bell pepper, seeded and sliced thin
  • 3 green onions, sliced
  • 1 large egg
  • about 2 cups bean sprouts
Peanut sauce

  • ½ cup peanut butter
  • ¼ cup lime juice
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 teaspoons grated fresh ginger
  • 1 pinch red pepper flakes
  • About 3 tablespoons water, to thin (depending on how well you drain the zucchini, you may or may not need this)
