Mich's Pierogies

 3# potatoes 12oz cheese

In 2 cup measuring cup:

1 whole egg, plus one additional yolk

same amount of oil

1 1/2 tsp salt

fill to 2 cup line with room temp water

whisk together and add to 4 generous cups of flour (add more flour or water for consistency)

knead 10 minutes until shiny and smooth


boil pierogies for 3 minutes after they float
